MARMITAKO
INGREDIENTES
- 70 g de aceite de oliva virgen
- 1 cebolla mediana
- 2 dientes de ajo
- ½ pimiento verde
- ½ pimiento rojo
- 750 g de patatas «triscadas»
- 1 vasito de vino blanco
- 1 hoja de laurel
- 1 guindilla o más…. al gusto
- 2 cucharadas de carne de pimientos choriceros
- 1 cucharada de pimentón de la Vera
- 1 litro de fumet o caldo de pescado
- 1 k de bonito fresco salpimentado una hora antes con sal y pimienta negra recién molida
- Para el fumet o caldo corto de pescado
- 1 zanahoria
- 1 cebolla
- 1 puerro
- Espinas, pieles y cabezas de pescado, rape o merluza mejor
ELABORACIÓN
Preparamos el caldo de pescado o fumet;
Ponemos en una olla las verduras, la cebolla, el puerro y la zanahoria, una hoja de laurel, junto con la piel, espinas y cabezas de pescado. Dejamos cocer sobre 20 minutos, colamos por una estameña y reservamos.
Ponemos el aceite en el fondo de una cazuela de barro, si es posible, sino utilizamos una tartera baja y ancha, añadimos la cebolla y el ajo, todo cortado en paisana fina, pochamos a fuego lento, salamos y cuando la cebolla este transparente, añadimos los pimientos cortado en dados pequeñitos y continuamos a fuego suave durante 10 minutos más. Mientras, pelamos, lavamos y “escachamos” las patatas, y las añadimos a la cazuela, salamos muy ligeramente y las rehogaremos con todos los ingredientes un par de minutos. Añadimos el vino, subimos el calor y dejamos unos minutos para que se evapore el alcohol. Añadimos el fumet hasta cubrir las patatas y removemos bien todo al calor durante unos minutos. Salpimentamos y añadimos la hoja de laurel, la guindilla, la carne de los pimientos choriceros y el pimentón. Cuando empiece a hervir, bajamos el fuego, tapamos la cazuela y dejamos cocer hasta que las patatas estén tiernas, media hora aproximadamente, moviendo la cazuela de vez en cuando para que las patatas vayan soltando el almidón. Reponemos fumet o agua si se evapora demasiado el guiso. Conviene usar patatas harinosas para trabar algo más la salsa. Si no es posible, podemos compensarlo haciendo puré algún trozo de patata. Cuando las patatas estén cocidas, añadimos el atún troceado, dejamos cocer 3 ó 4 minutos y apagamos el fuego, el pescado terminará de hacerse con el calor del caldo sin pasarse de cocción.
Dejamos reposar 3 minutos y servimos.
