CARNE ASADA
INGREDIENTES
- 3 ó 4 dientes de ajo
- 1½ Kg. de aguja o morcillo de ternera
- Sal
- Pimienta
- 2 cucharadas de manteca de cerdo
- 1 vasito de aceite de oliva
- 2 cebollas
- 2 zanahorias
- 1 vasito de vino blanco
- ½ l. de fondo blanco
- ½ Kg. de patatas pequeñas, peladas y lavadas
ELABORACIÓN
Majamos los ajos en un mortero. Retiramos la grasa de la carne, la salpimentamos y la adobamos con los ajos, la untamos con la manteca de cerdo y la dejamos macerar durante unas horas en la nevera.
En una cazuela ponemos aceite de oliva y doramos bien la carne por todos los lados, a fuego fuerte, para que quede jugosa. Bajamos el fuego y añadimos las cebollas y las zanahorias, todo cortado en brunoise, dejando rehogar durante unos minutos. Agregamos el vino y dejamos reducir.
Cubrimos con el fondo y dejamos hacer durante hora y media aproximadamente. Si se redujese demasiado, añadiríamos un poco más de caldo, hasta que la carne estuviera tierna.
Seguidamente retiramos la carne y pasamos la salsa por el chino. Volvemos a poner la salsa en la cazuela al fuego y ahí elaboramos las patatas, previamente doradas en la sartén, hasta que estén tiernas.
Dejamos reducir la salsa si es necesario, manteniéndola en el fuego un poco más, comprobamos y rectificamos la sazón.Servimos la carne cortada en rodajas gruesas, salseamos y guarnecemos con las patatas. Podemos decorar con vinagre de Módena al caramelo.
