POLLO A LA CERVEZA CON TROMPETAS DE LA MUERTE
INGREDIENTES
- 150 g de setas trompetas de la muerte o negrilla deshidratadas
- l pollo limpio y troceado
- Un bote de cerveza negra
- 50 g de aceite de oliva
- l cebolla
- 1 puerro
- 2 cabezas de ajo
- 2 hojas de laurel
- ½ kg de cebollitas francesas
- Tomillo
- Sal
ELABORACIÓN
Ponemos las setas en agua para que se hidraten. Dejamos marinando el pollo en la cerveza toda la noche en la nevera. Al día siguiente, retiramos el pollo, lo secamos con papel de cocina, y reservamos la cerveza donde estuvo marinado. En una sartén con el aceite caliente, ponemos el pollo hasta dorarlo solo exteriormente, cuando esté, lo retiramos y lo colocamos en una bandeja y reservamos. Retiramos el aceite y desgrasamos con un poco de cerveza o de agua y ese jugo se lo echamos al pollo. Volvemos a echar el aceite en la sartén y sofreímos la cebolla y el puerro cortado en juliana, añadimos las 2 cabezas de ajo aplastadas y el laurel; dejamos hacer lentamente hasta caramelizar. Ponemos en una olla, todo el conjunto de la sartén y el pollo que teníamos reservado. Braseamos (ponemos el pollo en el rondón y dejamos hacer de forma lenta y continua) y con una cuchara le vamos echando la cerveza donde estuvo marinado el pollo, poco a poco. Removemos y seguimos echando líquido. Salamos y seguimos mojando con la cerveza hasta que el pollo esté tierno. Aparte, en una sartén doramos las cebollitas, cuando tengan un poquito de color, añadimos las setas escurridas del agua de hidratación, y salteamos todo junto y dejamos cocer durante 15 ó 20 minutos. Volcamos todo en el rondón donde tenemos el pollo y espolvoreamos con un poco de tomillo. Podemos acompañar con patata batalla
