SALPICÓN DE MARISCO
INGREDIENTES
- 750 g de rape
- 1 buey de Francia
- 500 g de cigalas
- 500 g de langostinos
- 250 g de gamba arrocera
- 5 huevos
- Pimiento rojo asado para decorar
- 1 cebolla
- ½ vasito de aceite de oliva virgen
- Perejil picado
ELABORACIÓN
Si queremos que nos quede el rape cocido en forma cilíndrica y cortado en rodajas, debemos de envolver la cola del pescado en film transparente, enrollándola y atando los extremos para que no se abra durante la cocción.
La otra forma de cocerlo seria sencillamente ponerlo en una cazuela con abundante agua caliente y cuando empiece a hervir, incorporamos el rape y lo cocemos durante 7 minutos. Lo retiramos y lo dejamos enfriar.
Para cocer las cigalas (cocción 5-8 minutos, dependiendo del tamaño), los langostinos (cocción 3 minutos) y las gambas (1 minuto).
Ponemos al fuego una cazuela con abundante agua, 4 hojas de laurel y un puñado de sal. Cuando el agua empiece a hervir a borbotones echamos el marisco, cuando comience a hervir nuevamente, dejamos el tiempo necesario para cada marisco, seguidamente, lo retiramos, y lo enfriamos en un recipiente con agua muy fría y hielo y con 2 o 3 cucharadas de sal por litro, esto lo haremos para cortar la cocción, de esta forma quedara en su punto. Escurrimos y pelamos el marisco dejando las colas enteras si son pequeñas o las cortamos a la mitad.
Cocemos el buey: Ponemos la cazuela al fuego con agua, 30 g de sal por cada litro de agua y unas hojas de laurel.
Introducimos la pieza en agua fría, si el buey esta vivo. Y con el agua cociendo a borbotones si el buey pasó a mejor vida.
El tiempo de cocción es de aproximadamente 15 minutos por cada kilo de buey y 5 minutos por cada medio kilo más que se añada. Trascurrido el tiempo necesario, lo enfriamos en agua con hielo para cortar su cocción y conseguir una carne mucho más tersa. Tan importante es la cocción como el enfriamiento posterior.
Es aconsejable sacar los huevos de la nevera una hora antes de su cocción. Para cocer los nuevos, los cubrimos con agua fría, una cucharada de sal y los cocemos 12 minutos a partir de la ebullición, pero no los cuezas más de este tiempo. Cortamos la cebolla en brunoix en cuadraditos pequeños y Colocamos todo en una fuente, con todo el marisco, el huevo duro picado dejando un poco para decorar y echamos el aceite por encima. Decoramos con el resto del huevo, los pimientos asados y espolvoreamos con el perejil
