TARTA DE ALMENDRA TIA CONCHI
IEsta tarta de almendras o de Santiago no puede faltar el día 25 de Julio la festividad de Santiago Apóstol en toda Galicia
Apta para Célicos.
INGREDIENTES
400 g de almendras molida, yo utilizo la almendra Marcona
500 g de azúcar moreno
8 huevos, separando las claras de las yemas
Ralladura de limón (solo lo parte de la piel amarilla)
3 cucharaditas de canela molida
Un pellizco de sal
Azúcar glas para decorar
ELABORACION
Ponemos en un bol, las almendras molidas y el azúcar moreno, mezclamos todo bien. Añadimos las yemas de huevo hasta obtener una masa homogénea. Añadimos la ralladura de limón y la canela y mezclamos de nuevo hasta que se quede bien integrado.
En otro bol, ponemos las claras con el pellizco de sal y las montamos a punto de nieve. Añadimos la masa anterior con la ayuda de una espátula y con movimientos envolventes para evitar que se bajen las claras hasta que consigamos una masa lisa y homogénea.
Untamos un molde de 22 cm con mantequilla y lo espolvoreamos con harina o simplemente con spray especial para moldes para evitar que se pegue.Volcamos la masa en el molde y horneamos a 180º durante 45 minutos aproximadamente.
Dejamos enfriar y cuando este fría, desmoldamos y decoramos. Ponemos la plantilla de la cruz de Santiago y espolvoreamos azúcar glas,retiramos la plantilla con cuidad y nos quedara la silueta de la cruz.
Para saber si la tarta está hecha, pínchala con una brocheta. Si sale limpio, la tarta está hecha, pero si sale con restos de masa, déjala en el horno unos minutos más.
