YASSA
Receta senegalesa
INGREDIENTES
- 1 Kg. de carne de ternera picada
- Aceite de oliva
- 1 k. de arroz redondo de grano corto
- 5 dientes de ajo
- Perejil
- 5 guindillas de cayena
- Sal
- 3 cebollas
- 1 pimiento verde
- 1 pimiento rojo
- 1/4 k de gambas picadas
- 1 bote grande de tomate natural triturado o frito
- Pimienta negra
- 1 pastilla de caldo de verduras o de carne
- 1 cucharada de azúcar
- 1 vaso de agua
ELABORACIÓN
En un bol, ponemos el arroz, y lavamos con cuidado hasta quitarle el almidón. En un rondón ponemos agua y un buen chorrito de aceite. Dejamos hervir, salamos y añadimos el arroz que estará cubierto de agua. Dejamos cocer 20 minutos a fuego bajo, revolviendo al menos 2 veces durante su cocción. Aparte, en un mortero, ponemos los ajos, el perejil, la guindilla de cayena y la sal hacemos una pasta y reservamos. Ponemos en un bol, la carne, la deshacemos bien y le añadimos la pastilla de caldo, salpimentarnos y hacemos bolitas como las albóndigas. Cuando estén hechas, las freímos en una olla con aceite. En el momento en que estén doradas, retiramos el aceite sobrante de la tartera y añadimos la cebolla picada en brunoix, el 1/4 kilo de gambas picadas y rehogamos hasta que la cebolla este transparente. A continuación, le incorporarnos los pimientos picados de igual forma, dejarnos unos minutos y añadimos el bote de tomate y un vaso de agua; añadimos la pasta del mortero y una cucharada grande de azúcar Dejamos cocer sobre 25 minutos. Pasado ese tiempo y acabada la cocción, emplatamos en una fuente el arroz, lo aplastamos con el dorso de la cuchara y volcamos encima las albóndigas y la salsa. Servimos caliente.
