TAPANADE (PATE DE ACEITUNAS NEGRAS Y ANCHOAS)
INGREDIENTES
- 150 grs de aceitunas negras con hueso de muy buena calidad (me gustan mucho más que las deshuesadas)
- ½ ajo
- 2 filetes de anchoa en aceite
- 1 cucharada de alcaparras
- 1 cucharada de zumo de limón natural
- Unas arenitas de sal
- 4 cucharadas de aceite de Oliva Virgen Extra
- 1 cucharada de Orégano para decorar
ELABORACIÓN
Deshuesamos las aceitunas con un aparato especial para ello o con un cuchillo y con mucha paciencia.
Pelamos el ajo y lo ponemos en el vaso de la picadora eléctrica, junto con el resto de ingredientes menos el aceite de oliva. Trituramos hasta que nos haya quedado una pasta.
Poco a poco vamos añadiendo el aceite en hilo mientras removeremos la mezcla hasta que nos quede una pasta consistente y cremosa
Ponemos en la nevera y lo quitamos una hora antes de ponerlo en la mesa.
Servimos como aperitivo en tostas de pan.
Lo conservamos en un bote con tapa, cubierto por una ligera capa de aceite de oliva y así no perderá frescor. Podemos guardarlo durante 2 semanas en la nevera.
