TARTA SARA
La famosa tarta Sara. Su creador un pastelero francés, Jitrois, se inspiró en la actriz Sara Bernhardt actriz de teatro francesa, para la elaboración de ésta tentación.
Tres texturas, una base esponjosa delicado bizcocho, un relleno delicado, cremoso, suave, y una cobertura crujiente
INGREDIENTES
- Para el bizcocho:
- 4 huevos M
- 125 g de azúcar granillo y 1 cucharadita azúcar vainillado
- 125 g de harina
- 1 cucharadita levadura en polvo royal
- Para la crema de mantequilla:
- 250 gr. mantequilla a temperatura ambiente
- 75 g de azúcar glasé
- 2 yemas huevo
- 4 cucharadas de ron blanco
- Para el almíbar:
- 50 gr. azúcar
- 1/2 vaso agua
- 6 cucharadas de ron blanco
- Para la decoración:
- Almendras laminadas tostadas
- Azúcar glasé
ELABORACIÓN del bizcocho.
Batimos los huevos con el azúcar granillo y el vainillado con las varillas eléctricas hasta conseguir una crema blanquecina. Añadimos, la harina, previamente tamizada, mezclada con la levadura y la incorporamos con movimientos envolventes con la mano o con una lengua o espátula. Vertemos la preparación en un molde untado con mantequilla y espolvoreado con harina, si es necesario, si es de silicona, omitimos este paso. Cocemos en el horno precalentado a 180º durante 20 minutos, o hasta que al pinchar el centro del bizcocho con una aguja ésta salga limpia .No abráis el horno hasta finalizar la cocción. Lo dejamos reposar unos minutos, desmoldamos sobre una rejilla y dejamos enfriar.
Mientras preparamos la crema de mantequilla. En un bol ponemos la mantequilla y el azúcar y batimos hasta formar una crema. Incorporamos las yemas, una a una, y sin dejar de batir vertemos el licor. Reservamos la crema.
Preparamos el almíbar en un cazo, ponemos el azúcar, mojamos con el agua y cocemos durante 5 minutos, a partir de la ebullición, hasta obtener un almíbar. Retiramos del fuego, añadimos el licor y dejamos enfriar, Tostamos las almendras en el microondas y reservamos .Cortamos el bizcocho en capas y vamos mojando con el almíbar que preparamos con la ayuda de un pincel. Cuando lo tengamos todo mojado untamos con una parte de la crema de mantequilla y cubrimos con la capa superior del bizcocho. Mojamos la parte superior con el almíbar y cubrimos la superficie y los laterales con la crema restante, adherimos las almendras laminadas y tostadas por los costados y parte superior de la tarta y reservamos en la nevera.
Servimos espolvoreada con azúcar glas. Realmente deliciosa.
