BIZCOCHO DE COCO
INGREDIENTES
150 g de harina
50g de coco rallado
1 sobre de royal
Una pizca de sal
4 huevos M
100 g de azúcar
1 yogur de coco
100 g de aceite de oliva suave
Mantequilla y harina par el molde
ELABORACION
Encendemos el horno a 180º.
Preparamos un molde, con mantequilla y espolvoreado con harina y reservamos.
Tamizamos la harina con un colador o con un tamizador y reservamos.
En un primer bol, mezclamos la harina, el coco, el royal y la sal.
En otro bol, los huevos y el azúcar y batimos hasta que consigamos que suban y aumenten más del doble su volumen. Esto a mano nos llevara un buen rato, pero podemos utilizar una batidora con varillas. Cuando tengamos una crema homogénea y bien aireada, añadimos el yogur de coco, continuamos batiendo y añadimos el aceite. Mezclamos a todo éste preparado, el primer bol, (la mezcla de harina, coco, royal y la sal), y lo hacemos con cuidado, con una espátula y con movimientos envolventes para evitar bajar la mezcla.
Vertemos en el molde reservado y horneamos a 180º, durante 30-35 minutos aproximadamente. Comprobamos que está hecho con una brocheta y retiramos del horno, lo ponemos sobre una rejilla hasta que se enfríe. Decoramos al gusto y a servir.
