PANECILLOS DE HOT DOG
INGREDIENTES
600 g de leche
240 g de agua
90 g de manteca de vaca o (mantequilla en sustitución)
1.350 g de harina de fuerza
35 g de levadura fresca de panadería
45 g de azúcar
15 g de sal
Leche para pintar
ELABORACION
En un bol, mezclamos la leche, el agua y la manteca, atemperamos ligeramente un poco en el microondas o podemos hacerlo en el fuego suavemente con los ingredientes en un cazo.
En otro bol mezclamos la harina, la levadura y el azúcar.
Mezclamos todo en el vaso de la batidora y amasamos hasta obtener una masa homogénea, al final del amasado le incorporamos la sal, o podemos hacer el amasado a mano, con un poco más de tiempo, eso sí. Dejamos reposar la masa en bloque durante 30 minutos.
Cortamos porciones de 110 gramos, la estiramos con el rodillo y la enrollamos para formar la barrita, así hasta terminar la masa. Dejamos levedar de nuevo todas los panecillos hasta que doblen su volumen inicial.
Pintamos con leche, horneamos a 180ºC durante unos 15 minutos aproximadamente.
Dejamos enfriar al retirarlos del horno sobre una rejilla.
