BIZCOFLAN

INGREDIENTES

  •  Para el bizcocho:
  • 4 huevos
  • 100 g de azúcar
  • 100 g de harina
  • Para el flan:
  • 6 huevos
  • ½ litro de leche entera
  • 150 g de azúcar
  • Cáscara de limón y cáscaras de naranja para aromatizar
  • Para el caramelo:
  • Caramelo líquido o podemos hacerlo:
  • 8 cucharadas de azúcar.
  • Agua para mojar el azúcar
  • Unas gotas de limón

ELABORACIÓN

Cubrimos el fondo y las paredes de un molde rectangular con el caramelo líquido. Dejamos enfriar.
Preparamos el líquido de flan: echamos la leche en una olla con las mondas de los cítricos, dejamos hervir para aromatizar y retiramos del fuego dejándola enfriar.
Ponemos en un bol, los huevos y el azúcar, batimos ligeramente  y añadimos la leche aromatizada. Mezclamos bien y  reservamos.
Para elaborar el bizcocho: ponemos los 4 huevos en un bol junto con el azúcar, batimos con un batidor de varillas o una batidora eléctrica hasta que este espumoso y consigamos el punto de relieve. Añadimos la harina previamente tamizada y mezclamos con la mano, la  lengua o pala de goma.
Vertemos la preparación liquida del flan en el molde caramelizado, pasándola por un colador y cubrimos por encima con la mezcla del bizcocho, introducimos el molde en el horno precalentado a 180º y cocemos a baño Maria durante 40 minutos o hasta que al pinchar con un palillo salga limpio.
Dejamos reposar hasta que enfríe y desmoldamos sobre una bandeja de presentación. Podemos acompañar con nata montada.
