FLAN DE CLARAS

INGREDIENTES

  • 6 claras de huevo
  • 6 cucharadas rasas de azúcar (por cada clara- 1 cucharada de azúcar)
  • Azúcar para hacer caramelo, para el molde y para mezclar con las claras
  • Un chorrito de limón
  • Mantequilla o margarina para engrasar el molde
  • DECORACIÓN
  • Natillas o crema pastelera muy ligera

ELABORACIÓN

Ponemos las claras a punto de nieve, mientras batimos, le vamos añadiendo el azúcar y seguimos batiendo hasta que tengamos todo bien integrado y las claras estén a punto de nieve muy fuerte y muy brillantes.
Aparte, en una sartén hacemos un caramelo, con tantas cucharadas de azúcar colmadas como claras tengamos montadas (que en este caso serán 6) y el chorrito de limón.
Este caramelo líquido, cuando tenga un color dorado se lo añadimos a las claras montadas poco a poco.
Aparte, preparamos un molde previamente engrasado y recubierto con  caramelo. Si el molde es de silicona no nos hará falta enmantequillarlo.
Por último, vertemos la mezcla de las claras y el caramelo en el molde, cociéndolo a baño maría sobre 35 minutos a horno medio aproximadamente. Si se nos tuesta demasiado por arriba le ponemos papel albal.
Al sacarlo del horno se cubre con un paño para que no enfríe rápidamente.
Se sirve rodeado de natillas o de la crema pastelera muy ligera.

CREMA

  • 6 yemas
  • 6 cucharadas de azúcar
  • ½ litro de leche

Se bate todo junto y se pone a cocer a baño maría, si está muy espeso se le añade más leche.

NOTA.- Si queremos hacer más cantidad, le ponemos siempre la misma cantidad de azúcar que de yemas y la leche que necesite para conseguir una crema de textura suave y ligera. Igual que las clara, si tenemos un molde grande le ponemos 7 u 8 claras y lo mismo de azúcar.
