MACARONS
INGREDIENTES
- 125 gr de harina de almendras
- 225 gr de azúcar glasé (icing sugar)
- 4 claras de huevo
- 30 gr de azúcar glass (caster sugar)
- Colorantes, cacao en polvo, café molido
ELABORACIÓN
Mezclar el icing sugar con la harina de almendra. Colar, tamizar. Batir las claras de huevo con el caster sugar hasta que esté firme. Espolvorear las almendras y icing sugar mezclado en las claras de huevo montadas.
Batir la mezcla delicadamente con una espátula hasta que se ponga brillante. Colorear la mezcla del macaron según los sabores. Verter los pequeños macarons sobre el papel de horno. Usando la manga pastelera con la masa y dejar que la superficie se endurezca al aire libre durante, al menos, 30 minutos.
Hornear a 180º durante 8 minutos. Dejar que se enfríen y sacarlos del papel de horno.
Sellar los macarons de 2 en 2 rellenándolos por ejemplo, con mermelada.
Meter en la nevera y dejar que enfríen por lo menos, durante 24 horas antes de comer.
OJO: «Icing sugar» viene en polvo y se emplea para hacer glaseados y decoraciones.
«Caster sugar» son gránulos más chicos que los normales.
