MACARONS
INGREDIENTES 30 unidades
- 280 g de azúcar glas
- 160 g de almendra molida
- 3 claras de huevo
- Una pizca de sal
- Colorante al gusto
- 50 g de azúcar granillo
- ¼ de cucharadita de azucara vainillado
- Para el relleno de crema de pistacho:
- 1 clara de huevo grande
- 100 g de azúcar
- 150 g de mantequilla a temperatura ambiente
- 50 g de pistachos molidos
- Unas gotas de colorante verde
ELABORACIÓN
Encendemos el horno a 150º.
Tamizamos el azúcar glas y lo mezclamos bien con la almendra molida.
Aparte en un bol, montamos las claras, añadimos la sal, el colorante y poco a poco el azúcar granillo hasta obtener un merengue espeso.
Añadimos la mitad del azúcar glas con la almendra y removemos con suavidad con una espátula de abajo hacia arriba, le incorporamos el azucara vainillado y el resto del azúcar glas con la almendra, y continuamos removiendo con cuidado hasta que se incorpore todo.
Vertemos la mezcla en una manga pastelera con una boquilla redonda y grande y formamos círculos del tamaño de un botón grande.
Dejamos reposar 30 minutos a temperatura ambiente antes de introducir la bandeja en el horno, pasado este tiempo, lo horneamos en el horno precalentado a 150º durante 20-25 minutos o hasta que al tocarlo nos resulten duros. Dejamos enfriar y rellenamos con mermelada, o crema de diferente sabor.
Crema de Pistachos: Batimos las claras del huevo en un bol refractario que pueda ir al baño Maria, con una batidora eléctrica le añadimos el azúcar y el colorante, cuando estén montadas, seguimos trabajando con la batidora, hasta obtener un merengue denso. Retiramos del fuego y seguimos montando unos minutos hasta que se enfríe. Añadimos poco a poco la mantequilla a cucharadas batiendo sin parar hasta obtener una crema esponjosa. Por ultimo incorporamos el pistacho y mezclamos. Rellenamos los macarons con la crema de pistacho.
Nota.-Podemos poner la mezcla en el Decomaz con la boquilla redonda y grande y formamos botones del tamaño sugerido en el tapete para macarons.
