MIGAS EXTREMEÑAS
INGREDIENTES
Una barra de pan Candeal
200 gramos de panceta
200g chorizo
6 huevos camperos (opcional)
9 dientes de ajo
Aceite de oliva virgen extra
1 cucharada de Pimentón agridulce de La Vera
Un vaso de agua
1 cucharada de sal
PREELABORACION
Cortamos en pan en rodajas finas y después en cuadrados. Cortamos la panceta en dados pequeños. Cortamos el chorizo en rodajas.
ELABORACION
Ponemos la sal en el vaso de agua. Regamos las migas con un colador espolvoreando el agua. Removemos hasta que estén ligeramente hidratadas. Dejamos reposar 2 horas cubiertas con un paño húmedo.
En una parisien con aceite confitamos los ajos. Retiramos. Doramos la panceta. Retiramos. Doramos el chorizo. Retiramos.Ponemos las migas en la parisien , espolvoreamos con el pimentón y removemos a fuego lento, durante aprox.30 minutos. En los últimos 5 minutos incorporamos los ajos, la panceta y el chorizo y remover.
Mientras reposa freímos 6 huevos en abundante aceite, salamos y servimos las migas en cazuelitas individuales con un huevo frito cada ración
