PAVO BRASEADO
INGREDIENTES
- 1 pata de pavo
- 2 cebollas
- 2 dientes de ajo
- 2 zanahorias tiernas pequeñas
- Aceite de oliva
- Manteca de cerdo
- Un vasito de vino blanco
- Fondo blanco
- Sal gruesa
- Pimienta blanca o 5 bayas
- 1 kilo de patatas torneada o pequeñas
- Salsa parís (opcional)
ELABORACIÓN
Salpimentamos el pavo y la adobamos con los ajos machacados previamente en el mortero. Untamos la pieza con un poco de manteca de cerdo y la dejamos macerar por espacio de tres o cuatro horas en el frigorífico. Ponemos una cazuela al fuego con un buen chorro de aceite de oliva y doramos el pavo por todos los lados.
Añadimos las verduras de condimentación, es decir, las cebollas y las zanahorias previamente cortadas en paisana gruesa y dejamos rehogar unos minutos.
Cuando estén las verduras bien pochadas las bañamos con el vino y dejamos reducir.Cubrimos con el fondo de carne hasta cubrir generosamente la carne y dejamos hacer a fuego lento hasta que este tierna, una hora aproximadamente. Comprobamos que la carne está hecha y si es así, retiramos la pieza de pavo y pasamos la salsa por un chino, procurando que pase la mayor parte posible de verduras y desgrasamos.Ponemos nuevamente la carne y la salsa en la cazuela y hacemos ahí las patatas, previamente doradas en la sartén, hasta que estén tiernas. Reduciremos la salsa si es necesario y comprobamos y rectificamos de sal si hiciese falta. Servimos en una bandeja, cortada en rodajas gruesas, con las patatas y la salsa bien caliente.
