SOLOMILLO DE CERDO CON CHAMPIÑONES Y SALSA DE MOSTAZA (thermomix)
INGREDIENTES-
Para 4 raciones
450 g de solomillo de cerdo cortado en rodajas de 1 cm
100 g de champiñones frescos laminados
75 g de vermut blanco o de vino de Madeira
100 g de leche
60 g de cebolla en trozos
1 diente de ajo (opcional)
2 cucharaditas de mostaza de grano entero
1 cucharadita de mostaza picante
1 cucharadita colmada de concentrado casero de caldo de pollo o 1 pastilla de caldo de pollo
1 cucharadita de sal
1 pellizco de pimienta negra molida
2 cucharaditas de crême fraiche o nata liquida
1 cucharada colmada de maicena
2-3 ramitas de perejil fresco (para decorar)
ELABORACIÓN
Ponemos en el cestillo las rodajas de solomillo y los champiñones laminados, alternando capas. Reservamos.
Ponemos en el vaso el vermut, la leche, la cebolla, el ajo, la mostaza de grano, la mostaza picante, el concentrado de pollo, la sal y la pimienta. Introducimos el cestillo en el vaso y programamos 10 minutos, 100º velocidad 1.
Con la espátula, removemos el contenido del cestillo para obtener una cocción uniforme y programa 5 minutos, 100 Cº velocidad 1.Con la muesca de la espátula extraemos el cestillo y colocamos la carne y los champiñones en una fuente. Añadimos al vaso la crême fraiche y la maicena y programamos 3 minutos, 80º, velocidad 4.
Vertemos la salsa encima de la carne, decoramos con el perejil y servimos caliente.
Sugerencia.- La carne tiene que quedar cocida pero jugosa. Si la prefieres mas hecha, una vez ha removido la carne y los champiñones en el cestillo, programa 10 minutos, 100º, velocidad 1 en lugar de solo 5 minutos.
