TARTA HELADA DE NATA CON PRALINÉ DE ALMENDRAS
INGREDIENTES
150 g de azúcar
100 g de almendras crudas sin piel
75 g de galletas maría ó digestive
30 g mantequilla (opcional)
500 g de nata con 35% M.G. muy fría
370 g de leche condensada
ELABORACIÓN
Para el praliné: Ponemos el azúcar en una sartén y lo calentamos hasta que se funda y adquiera un color dorado. Añadimos las almendras, dejamos que se caramelicen y vertemos sobre un papel de hornear o sobre una lámina de silicona. Dejamos enfriar.
Ponemos en el vaso el praliné de almendras en trozos y troceamos 3 seg/vel 5. Retiramos del vaso y reservamos.
Ponemos las galletas en el vaso junto con la mantequilla y trituramos 8 seg/vel 7. Vertemos en un molde desmontable de 20 cm. Con el dorso de una cuchara, repartimos la galleta triturada por la base del molde y reservamos.
Colocamos la mariposa en la cuchillas, ponemos la nata y programamos vel 3,5 sin programar tiempo, hasta que esté semimontada (tiene que quedar cremosa).
Con la espátula, bajamos la nata hacia el fondo del vaso. Incorporamos la leche condensada y mezclamos 3 seg/vel 2,5. Vertemos la mitad de la nata en el molde reservado, repartimos el praliné de almendras reservado y cubrimos con el resto de la nata. Introducimos el molde en el congelador durante un mínimo de 4 horas. Desmoldamos la tarta, decoramos al gusto y servimos congelada.
NOTAS:
Esta tarta se corta muy bien utilizando un cuchillo remojado unos segundos en agua muy caliente.
Podemos decorarla con frutas rojas.
La receta original no lleva mantequilla en la base de galletas, pero así no se rompe.
