BIZCOCHO DE CALABAZA

 

INGREDIENTES 

  • 600 gr calabaza
  • 5  huevos
  • 200 gr azúcar
  • 150 gr de mantequilla
  • 100 gr  coco rallado
  • 150 gr  harina
  • 1 sobre de royal
  • 1 pellizco de sal para las claras

ELABORACIÓN

Calentamos el horno a 180º.
Ponemos en una tartera la calabaza troceada, la dejamos cocer hasta que esté tierna dejamos enfriar, la escurrimos y trituramos.
En un bol, batimos las yemas y el azúcar hasta conseguir una crema suave, clara y esponjosa.
Aparte, en otro bol, batimos las claras con el pellizco de sal hasta que estén a punto de nieve.
En el bol que tenemos la calabaza triturada, le incorporamos la mantequilla a punto de pomada o derretida y fría, mezclamos  bien en la batidora o con una cuchara de madera, añadimos el coco y la harina previamente tamizada junto con el royal.
Finalmente le agregamos las claras montadas con suaves movimientos envolventes de arriba abajo hasta que nos quede una crema muy suave. Engrasamos el molde, si es necesario  y vertemos la mezcla.
Introducimos en el horno a 180º durante 40 o 45 minutos aproximadamente.
Dejamos enfriar, desmoldamos y servimos o  espolvoreamos con coco rallado o azúcar glas.
