CREMA DE PIMIENTOS DEL PIQUILLO
INGREDIENTES
- 50 g de aceite de oliva
- 2 dientes de ajo
- 300 g de pimientos del piquillo
- 50 g de mantequilla
- 330 g de patatas
- 1 litro de caldo de ave
- Sal
- Pimienta
- 1 dl de nata
- Costrones de pan para decorar
ELABORACIÓN
En un rondón con aceite, doramos los dientes de ajos pelados. Una vez dorados añadimos los pimientos del piquillo escurridos de los jugos de la conserva. Rehogamos y añadimos la mantequilla y las patatas limpias, peladas y troceadas.
Las salteamos con los pimientos, añadimos a continuación ½ litro de caldo de ave, sal y pimienta y dejamos cocer 20 minutos.
Retiramos del fuego y lo trituramos, pasamos por un chino y añadimos más caldo si fuera necesario.
Volvemos a poner a fuego suave, y añadimos la nata, rectificamos de sal y mezclamos bien.
Dejamos reducir en el fuego y servimos acompañado de costrones de pan hechos en el horno.
En verano podemos tomar esta crema fría.
NUTRICIÓN
Podemos hacer esta crema sin utilizar la nata, y solo aceite de oliva en su elaboración, bajamos su contenido en grasa y en este caso haremos una crema menos calórica.
Los pimientos del piquillo son hortalizas ricas en vitamina c, y su color rojo característico es debido al licopeno, un pigmento al que se le atribuyen propiedades antioxidantes.
Son ricos en vitamina C, fuente de fibra soluble y presentan una baja densidad calórica, son ricos en agua y pobres en grasas y proteínas.
Esta crema, es perfecta para un primer plato y también nos permite acompañar cualquier pescado o carne, es perfecto para utilizar puesto que la vitamina C que contienen los pimientos contribuye a la mejor asimilación del hierro que tienen las carnes, pescados y huevos.
