CREMA DUBARRY
INGREDIENTES
- 1 coliflor mediana, solo la piña
- 50 g de mantequilla para el fondo del rondón
- 1 puerro, solo la parte blanca
- I patata grande
- 1 ½ litro de fondo blanco
- Sal
- Un bouquet de nata
- ½ litro de leche
- Ramilletes pequeños de coliflor para decoración o picatostes
ELABORACIÓN
En un rondón, una olla alta, ponemos la mantequilla. Rehogamos el puerro cortado en paisana, una vez rehogado el puerro, le añadimos la patata cortada en dados y la coliflor cortada en ramilletes, dejamos rehogar nuevamente y mojamos con el fondo y con la leche. Dejamos cocer sobre 20 minutos. Una vez que estén tiernas las verduras pasamos por la thermomix o batidora, Ponemos en el fuego, se levanta la crema y ponemos a punto de sal, suavizamos con la nata y si fuese necesario por estar muy concentrado, agregaríamos un poco de fondo blanco’ para darle el punto adecuado de espesor. Se guarnece con picatostes o con unas piñitas pequeñitas de coliflor.
NOTA.- Podemos sustituir las patatas por arroz,Y también la mantequilla por aceite de oliva La proporción del líquido será de 3 litros de fondo blanco por 1 litro de leche
