DELICIOSA TARTA DE ZANAHORIA

CARROT CAKE

INGREDIENTES

Para el bizcocho:
100 gr de nueces picadas y unas pocas más enteras para decorar.
350 gr de zanahorias frescas de manojo limpias
4 huevos Ma temperatura ambiente   (sobre 250 g)
300 gr de azúcar granillo
2 cucharillas de extracto de vainilla
240 gr aceite de girasol o  especial postres
130gr harina de trigo
2 cucharaditas (de postre) de levadura química
1 cucharadita  de bicarbonato sódico
2 cucharaditas de canela en polvo
1 cucharadita de jengibre en polvo
1 pizca de sal

Para la crema
50 gr de mantequilla a temperatura ambiente
220 g de queso de untar Philadelfia
230 gr de azúcar glas
1 cucharadita de extracto de vainilla

ELABORACION
Precalentamos el horno a 180º.C.
Para el pastel de zanahoria
Tostamos las nueces en el microondas durante 2 minutos, retiramos, removemos y ponemos y 1 minuto más. Dejamos enfriar. Ponemos las nueces en el vaso de la thermomix y troceamos 3 segundos, velocidad 4. Reservamos.
Ponemos en el vaso las zanahorias lavadas y en trozos y programamos 8 segundos velocidad 5. Reservamos. Lavamos y secamos el vaso.
Ponemos la mariposa en las cuchillas y vertemos  en el vaso los huevos, el azúcar y la vainilla, batimos  10 minutos a velocidad 4. Volvemos a programar 1 minutos sin quitar la mariposa y en velocidad 3vamos incorporando  el aceite poco a poco en hilo  batiendo  hasta terminar de incorporar el aceite. Retiramos la mariposa. Añadimos la harina,  levadura,  bicarbonato, canela, jengibre,  sal y  programamos 3 segundos, a velocidad 6.
Añadimos las zanahorias y las nueces picadas y reservadas y programamos 2 segundos velocidad 6.
Ponemos  la mezcla un molde con una base de papel de horno en la base del molde  y rociamos con spray desmoldante  los laterales. Horneamos 55ºminutos  a 180ºC con calor arriba y abajo o hasta que al introducir una brocheta en el interior del bizcocho no salgan restos de masa.Retiramos del horno y dejamos templar antes de desmoldar-
Le damos la vuelta al bizcocho, le reiteramos el papel del hornear y terminamos de enfriar sobre una rejilla.

Glaseado de crema de queso
Ponemos la mantequilla y el queso  en el vaso  y programamos  20 segundos en velocidad 4. Incorporamos el azúcar glas y la vainilla y programamos de nuevo 20 segundos en velocidad 4
Ya frio, cortamos el bizcocho por la mitad y lo rellenamos con la mitad de la crema, colocamos la otra capa de bizcocho encima y lo cubrimos con el resto de la crema. Decoramos con unas nueces.
Nota.- Podemos repartir la mezcla en dos moldes de horno previamente untados con aceite o mantequilla y espolvoreados con harina, entonces horneamos durante  35- 40  minutos.
Si lo hacemos en un solo molde  lo dejaremos de 55 a 60  minutos 180ºC con calor arriba y abajo o hasta que esté listo.
