ENSALADA DE PASTA CRUJIENTE CON SALSA DE YOGURT
INGREDIENTES
- 2 yogures griegos naturales
- Escamas de sal Maldon o sal rosa del Himalaya
- 1 bote pequeño de salsa mayonesa
- 2 cucharaditas de perejil picado
- Pasta de colores, lacitos
- 2 nueces de mantequilla para la pasta
- Brotes tiernos Mesclum Vitacress de agricultura biológica
- Bacón cortado en dados
- Aceite de oliva para freír
- 2 rebanadas de pan de molde para tostadas cortada en dados
- 2 tomates rojos, maduros limpios y cortados en dados
- 1 pimiento rojo cortado en cuadraditos
- 2 manzanas con piel y cortadas en dados
- Queso fresco o filadelphia especial para ensaladas cortado en dados
- Tomatitos cherry cortados al medio
- 50 g de nueces peladas y picadas
ELABORACIÓN
Comenzamos realizando la salsa de yogurt, para lo que vertemos los yogures en un bol, añadimos una pizca de sal y le incorporamos la mayonesa, para darle color le añadimos 2 cucharadas de perejil picado.
Mezclamos bien y reservamos en la nevera.
La pasta la cocemos en una olla con abundante agua hirviendo con sal durante 7 ó 10 minutos, siempre mirando lo que nos dice el fabricante y dejándola “al dente”, transcurrido el tiempo, escurrimos y lo pasamos por agua fría, les ponemos unas nueces de mantequilla, para evitar que se peguen y reservamos.
Aparte, freímos en una sartén con un chorrito de aceite el bacón, cuando este crujiente, retiramos y reservamos.
Añadimos un poco mas de aceite en la misma sartén y freímos los daditos de pan, cuando esté dorado, igualmente retiramos y reservamos.
En un plato de presentación, ponemos una cama de pasta, dejando alguna para decorar, los brotes tiernos, los tomates, los pimientos, las manzanas, el queso, el bacón, el pan y los tomatitos cherrys.
Mezclamos con la salsa de yogurt y espolvoreamos con las nueces picadas.
Nota.- Podemos sustituir los brotes por verduras frescas de lechuga roja, verde, rúcula, o espinacas.
