POLLO AL CURRY
Pollo al Curry de inspiración india.
INGREDIENTES
- ½ kg de pollo
- 1 cebolla mediana
- Aceite de oliva (unas 8 cucharadas)
- 25 gramos de mantequilla
- 2 cucharadas de Curry
- 25 gramos de almendras crudas peladas, tostadas y molidas
- 250 gramos de champiñones frescos pequeños o una lata
- 250 ml de caldo de pollo
- 100 gramos de arroz Basmati, Thai o un arroz de grano largo)
- Sal
ELABORACIÓN
Retira el exceso de grasa del pollo, y córtalo en trozos medianos y reserva. Pela la cebolla y pícala en brunoix, trozos pequeñitos. Pon en una wok, 5 cucharadas de aceite de oliva y la mantequilla. Pon a fuego medio y añade la cebolla, sala ligeramente y deja al fuego hasta que la cebolla se ponga transparente. Cuando la cebolla esté en su punto, añade la pasta del curry y mezcla bien. Deja a fuego bajo. Tuesta las almendras en el microondas, en el horno o en una sartén mediana y ponla al fuego sin aceite. Cuando esté algo caliente echa las almendras y deja que se tuesten durante unos segundos, retira de la sartén y resérvalas. Si los champiñones son frescos pon en otra sartén 3 cucharadas de aceite de oliva. Cuando el aceite esté caliente echa los champiñones y saltea durante un par de minutos para que se doren ligeramente. Después echa los champiñones en la cacerola con la cebolla. En la misma sartén donde hemos salteado los champiñones salteamos a fuego fuerte el pollo previamente salpimentad y lo ponemos en la cacerola con los champiñones y añadimos el caldo de pollo y. Dejamos a fuego medio. Espolvoreamos la almendra en polvo tostada y removemos. Para el Arroz basmati: Ponemos a hervir 3/4 de litro de agua. Cuando el agua hierva añadimos el arroz con una cucharada pequeña de sal, dejamos cocer hasta que el arroz esté en su punto, es conveniente mirar las indicaciones del fabricante. Cuando el arroz esté listo escurre bien y sírvelo caliente.
