BLINIS DE PATATAS Y CHORIZO

INGREDIENTES
- 1 chorizo fresco
- ¼ kg de patatas
- 1 cebolla pequeña
- 50 g de harina
- 4 yemas de huevo (85 g)
- 3 claras de huevo (100 g)
- 4 cl de nata liquida
- ½ cucharadita de sal
- Aceite de oliva
- Hojas de lechuga para decorar
ELABORACIÓN
Cortamos el chorizo en rodajas y lo reservamos. Pelamos las patatas y las hervimos en agua con sal. Pasamos por el pasapurés mas fino y reservamos caliente. Pelamos y cortamos la cebolla en juliana fina, y la pochamos en el aceite hasta que nos quede transparente. Mezclamos el puré con la cebolla, la harina, las yemas de huevo, las claras, la nata y la sal, procurando que nos quede una masa homogénea. Ponemos una sartén al fuego con un poco de aceite, cuando este caliente, ponemos una cucharada de pasta en la sartén y a continuación una rodaja de chorizo. Cuando este dorada, le damos la vuelta para que se termine de hacer. Ponemos los blinis en un plato de presentación acompañado por unas hojas de ensalada.
Nota.- Podemos utilizar este plato para hacer los blinis con lo que lo que nos sobre de un pollo cocido o asado o los resto de la carne de un cocido, nos será muy útil como plato de aprovechamiento.
