CONSOMÉ VEGETARIANO

 

INGREDIENTES

  • 200 g de zanahorias  troceadas
  • 150 g de judías verdes
  • 100 g de cebollas
  • 150 g de patatas
  • 150 g de puerros
  • Un trozo de apio
  • Caldo vegetal o
  • 2 pastillas de caldo de verduras
  • o sal
  • Jengibre (opcional)
  • Agua

ELABORACIÓN

Cortamos todos los ingredientes y los ponemos en un rondón cubiertos de agua.
Calentamos hasta hervir, reducimos el fuego y dejamos hacer 45-60 minutos o hasta que estén tiernas las verduras.
Colamos el caldo y lo tomamos como un consomé.
Otra opción seria triturar los ingredientes y servirlo como una crema de verduras.
Decoramos con huevo duro o con perejil picado.
NOTA.- Si queremos que el consomé tenga mas sabor podemos freír las verduras a fuego bajo con un poco de aceite, también podemos cambiar las verduras al gusto.
Mejor no añadir ingredientes cono son los vegetales verdes como la col o el bróculi, le darían un gusto amargo, la remolacha le cambiaria el color y no debemos de utilizar verduras pasadas.
