COSTILLA DE CERDO ADOBADA CON PATATAS
INGREDIENTES
- 1 kg de costilla adobada
- 4 cucharadas de aceite de oliva
- 1 cebolla
- 1 pimiento rojo
- 1 pimiento verde
- 1 cucharadita de pimentón agridulce
- 1 sobre de azafrán
- 1 tomate maduro y rallado o un vasito de tomate frito casero
- 1 vaso de vino blanco
- 50 grs. de guisantes
- 1 kg de patatas
- Sal
ELABORACIÓN
Cortamos la costilla en tiras, cada una con su hueso. En una cazuela, ponemos el aceite de oliva. Doramos la costilla durante unos minutos, añadimos la cebolla picada en brunoix y los pimientos picados de igual forma, el pimentón dulce y el azafrán. Rehogamos todo y dejamos unos minutos más. Añadimos el tomate, mojamos con el vino blanco y dejamos evaporar el alcohol durante unos minutos. Añadimos los guisantes y un vaso de agua si hiciese falta para cubrir la costilla. Dejamos cocer unos 25 minutos, o hasta que esté tierna. Añadimos las patatas chascadas al guiso y dejamos cocer durante unos 10 minutos más. Cuando estén blanditas, apagamos el fuego y dejamos reposar unos minutos para que espese el guiso. Servimos calentito.
