DOLMAS GRIEGOS
INGREDIENTES
- 8 hojas de acelgas grandes y enteras
- 2 patatas de Coristanco, por ejemplo
- 300 gr de carne de ternera picada
- 2 dientes de ajo
- Perejil picado
- 50 gr de jamón serrano
- Sal
- Pimienta blanca molida
- 2 dl de vino blanco aromático
- 2 dl de caldo de carne
- Aceite de oliva
ELABORACIÓN
Escaldamos las hojas de acelgas en agua hirviendo con sal, durante 5 minutos. Las escurrimos y refrescamos en agua fría con hielo.
En una olla, cocemos las patatas con piel, en agua con sal. Una vez cocidas, las pelamos y las aplastamos con un tenedor.
Rehogamos la carne picada en aceite de oliva junto con los ajos picados durante unos minutos.
Añadimos la carne y los ajos picados mezclándolo bien a las patatas. Incorporamos el perejil picado, el jamón serrano cortado en taquitos pequeños, la sal y la pimienta blanca molida.
Extendemos las hojas de acelgas y ponemos una pequeña cantidad del preparado anterior en el centro. Formamos los rolitos y los salteamos en una sartén con un poco de aceite de oliva.
Los mojamos con el vino, dejando que se evapore.
Agregamos el caldo de carne y lo dejamos cocer durante 5 minutos, a fuego medio.
Emplatamos espolvoreando por encima perejil picado.
Podemos utilizar repollo u otra verdura que nos guste, pero si es mas dura, dejaremos unos minutos mas en el fuego.
