HOJALDRE DE SALMÓN FRESCO

INGREDIENTES

1 puerro
1 cebolla pequeña
Aceite de oliva Virgen Extra
400 g de salmón fresco limpio sin piel ni espinas
Sal
Pimienta 5 bayas
1 lamina de hojaldre
Eneldo
1 huevo

ELABORACION

Precalentamos  el horno a 200º.
Limpiamos y cortamos el puerro y la cebolla, Salpimentamos el salmón fresco y reservamos.
Ponemos el aceite en una sartén bien caliente, le damos un toque de calor al salmón. Vuelta y vuelta para los trozos más delgados y 2 minutos en cada lado para los más gruesos. Reservamos el salmón en un escurridor para que cuando lo pongamos sobre el hojaldre no lo humedezca. En la misma sartén pochamosa fuego  suave, el puerro y la cebolla muy picada. Dejar hacer sobre 10 minutos hasta que nos quede tierna y transparente. Sazonamos con un poco de sal
En una bandeja para horno extendemos el hojaldre. Ponemos  una capa del sofrito. Colocamos el salmón y  de nuevo ponemos otra capa de hortalizas por encima. Sazonarlo con eneldo picado. Cubrimos con el hojaldre, lo cerramos bien los bordes  y pintamos con huevo batido. Horneamos  a 200º durante 20 minutos. Lo sacamos del horno y con mucho cuidado lo colocamos sobre la fuente de servir.
