PASTA FLORA
INGREDIENTES
600 gr mantequilla
200 gr azúcar glas
½ unidades de ralladura de limón
2 unidades de huevos
1 dl de leche
1 kg de harina
10 gr de impulsor
ELABORACIÓN
Pon a batir en la batidora con el gancho la mantequilla hasta convertirla en pomada o también podemos hacerla a mano, con cuchara de madera hasta que nos quede en pomada igualmente, después ya, incorporamos los demás ingredientes por este orden: Azúcar glas, aroma, huevos/ y leche. Por último, incorporamos la harina, mezclada el impulsor. Amasa justo hasta que estén mezclados los ingredientes. Deja reposar en frío la masa tapada con film transparente para que no coja costra, una hora aproximadamente. Espolvorea la mesa con harina y extiéndela con el rodillo, Corta con el cortapastas y dale la forma deseada. Cuece en el horno a unos 180ºC hasta que esté dorada. Una vez frías terminar de decorar si os gusta con chocolate o glasa real.
OBSERVACIONES
Se puede sustituir un porcentaje del 6% de harina por cacao, obtendremos pasta de chocolate, pudiendo realizar pastas de dos colores intercalándolos. Para su estirado deben tener el mismo grosor, esto se consigue cuando se estira colocando dos tablillas del grosor deseado para que pase el rodillo por encima. Es conveniente espolvorear con harina la mesa de trabajo, así como por encima de la masa para que podamos trabajar bien con el rodillo. Se debe hacer la masa el día anterior de su utilización. Si se amasa demasiado a la hora de incorporar la harina, la masa puede tomar mucha liga y la masa se contrae.
PREPARACIONES PREVIAS
Puesta a punto el encendido del horno. Previsión de útiles y herramientas: Rodillo, cortapastas, bandeja de horno. Aprovisionamiento de materias primas: mantequilla, harina tamizada, azúcar glas, huevos, aromas, sal y los ingredientes necesarios para la elaboración y la decoración de las piezas. Pesar los ingredientes. La CONSERVACIÓN de la masa es de 3 días en el refrigerador, siempre tapada y protegida de aire.
