INGREDIENTES

  • ½ kilo de masa de hojaldre
  • 80 g de almendras naturales, sin tostar picadas

GLASA REAL

  • ½ clara de huevo
  • 125 g de azúcar glass aproximadamente
  • 1 cucharada de zumo de limón
  • Cabello de ángel
  • Gotas de café muy  fuerte

ELABORACIÓN

Extendemos la masa de hojaldre sobre el papel de horno y colocamos en la bandeja de hornear en un grosor de unos 4 mm aproximadamente.
Extendemos el cabello de ángel y tapamos con otra capa de masa de hojaldre.
Pinchamos toda la masa con un rodillo de púas o con un tenedor para que el hojaldre no suba mucho cuando lo horneemos. Dejamos reposar unos minutos.
Preparamos la glasa:
En un bol de cristal, ponemos la clara de huevo y la removemos junto con el zumo de limón con la ayuda de una cuchara o espátula de madera, y le vamos añadiendo poco a poco el azúcar glass. Manchamos la glasa con  unas gotas de café para darle color. Debe de quedarnos una masa consistente pero que se pueda alisar.
Humedecemos el hojaldre laminado con un poco de agua con la ayuda de un pincel para eliminar los restos de harina antes de poner la glasa, si fuera necesario.
Aplicamos la glasa en el centro del hojaldre y la extendemos con la ayuda de una espátula.
Por encima esparcimos la almendra troceada.
Cortamos el hojaldre con un cuchillo bien afilado, formando tiras o triángulos, procurando que quede espacio suficiente entre cada tira para que se cuezan bien.
Metemos la bandeja en el horno precalentado a 180º y lo cocemos sobre unos 15 minutos o hasta que la glasa adquiera un bonito color dorado.

NOTA.- Si hace mucho calor podemos poner el hojaldre preparado unos minutos en el congelador para que se endurezca un poco y se pueda cortar mejor.
Si nos pasamos con la cantidad de clara al preparar la glasa, lo solucionamos añadiendo más azúcar glas, y removiendo con la cuchara de madera hasta obtener la textura que podamos extender y si por el contrario nos queda demasiado espeso, le añadimos unas gotas de agua poco a poco o de clara de huevo.
